caseus: every cheese has a story

A few co-workers and I recently visited Caseus a local bistro and fromagerie to pick through a few of their one hundred artisan cheeses. As we sat in their cave-like facilities for aging cheese, their “zealous pursuit of pleasure through eating” was apparent. I had met a few of their chefs at Yale’s Sustainable Farm dinners and was amused to see them in their element, mohawks and all. David Brooks would be delighted to find another example of the Bobos’ new code of consumption.
